Fresh and Prepared Duck & Goose Livers

 
 

Foie Gras is the delightfully large rich liver that comes from specialty Goose or Duck. It is usually served as an appetizer that is saute'ed (quick pan fried) or cooked in a terrine (cooked by water bath and allowed to cool).

Our pink lobes (Foie Gras Cru) of Grade A and Grade B Canadian Duck Livers are ordered and delivered 24 hours fresh from the Abattoir. Canadian Duck Foie Gras tends to have a richer flavor than that from other countries because the Ducks are fed a high maize content. Raw Foie Gras Slices are also available for smaller servings.

Cooked Foie Gras Terrine is readily spread on toast and enjoyed best with some Canadian Ice Wine. Available in shelf stable Bloc du Foie Gras and refrigerated fresh Terrine Jars.
